Puy Lentil and Courgette Stew
This recipe from Tanya Ranlow makes for a great vegetarian main or side dish for cooler autumn evenings.
Serves six as a main
Preparation time: 35-40 minutes
450g puy lentils cooked
800g (two tins) chopped tomatoes
2 medium courgettes diced
4 carrots diced
4 garlic cloves sliced
3 small onions sliced
5 sprigs fresh thyme or 1/2 teaspoon dried thyme
Four sprigs fresh rosemary or 1/2 teaspoon dried
1 vegetable stock cube
⁃ Sweat the diced carrot, onion and garlic until the onion is pale and translucent
⁃ add the courgette and herbs
⁃ Cook for five mins on a medium heat then add the tomatoes, stock and 100ml of hot water
⁃ Cook on a low heat for 15 minutes, stirring occasionally
⁃ Add the cooked lentil and heat through
⁃ Season to taste
